Possibly the most pungent of all spices, Asafoetida is often used in Indian cooking, especially vegetarian, in very small quantities - only a tiny amount is needed and is usually the first ingredient in the hot oil. The overpowering smell gives way to something much more pleasant when heated in oil, when the aroma becomes reminiscent of onions and garlic. Jains, in particular, cook with it as they can't eat onions or garlic.
