About the product

Grown in Afghanistan and mainly India this oleoresin gum is tapped from the root of the ferula plant, part of the celery family. We offer two types, the Kabuli Sufaid and Lal varieties. The former milky white (this one), the latter a yellow, lighter brown colour (here). Reputed to have anti-flatulence properties this spice tends to be used extensively in lentil based dishes. Known also as ‘devil’s dung’ it’s extremely pungent. Use it as one might, Nam Pla, to add depth to a dish from curries, meat stews, to root vegetable dishes, relishes and chutneys.
