This is Tikka with a difference. Not the traffic-light-red, day-glo, cream-thickened gravy boat of the late-night high street. This is something else entirely — deeper, more refined, like the dish took a long walk and learned a little restraint.

Inspired by Murgh Makhani, but sharper, smarter. There are 17 spices in here - not that you’re expected to count them - including cumin with a point, fenugreek with its whisper of smoke, and a Garam Masala so good it ought to be locked in a cabinet. The spices are whole, fresh, ground in batches so small you’d think they were being prepared for a particularly fussy prince.

You mix it with ginger, tomatoes, yoghurt. It doesn’t shout. It doesn't need to. What you get is warmth, richness, and a sense of quiet satisfaction — like finally buying the right pair of shoes after years of pretending others fit.
