CUMIN

Part or type: Fruit

Main flavour and aroma compound: cuminaldehyde

Cumin comes from a flowering herbaceous annual plant. The fruits are ready for harvesting when they turn yellow-brown. After drying, the fruits can be dry-roasted or fried in ghee or oil to maximise their intensely savoury flavour.

Cumin has a high iron content and highly reputed digestive properties, indeed the Hindi for cumin, ‘jeera’ is derived from a Sanskrit word meaning ‘digestive’. It is a major part of much Indian cooking, and a constituent part of Garam Masala and the Bengali whole-spice mixture, Panch Phoran. Cumin adds savoury, earthy depth to a dish, a sort of ‘bedrock’ flavour for lighter aromatics to dance upon.

  • Harvest Time: February to March
  • Storage: Airtight, out of the light. Ideally not above 18°C
  • Flavour note (bass, mid, high): BASS. Citrus, rich, earthy and warm
  • Main Flavour Compound: Cuminaldehyde, cuminal, β-pinene, γ-terpinene, safranal
  • Use By: 6 months from purchase date

Market Update

Young cumin crop

Crop yield is average this year. Late sowing took a hit (in terms of yield) due to there being no real Spring season to speak of what with the heat coming prematurely, so not allowing the Late season planting to grow properly. It also ripened too fast, which clearly has affected yields.

Notwithstanding this, prices are holding steady despite record exports  this year again. Prices are likely run stable for the coming months. IPM Cumin again this year is a serious challenge and prices are set to rise.


Crop and Market scenario – updated quarterly

Daily arrivals in the Unjha market yard were in the range of 300-400 MT

Prices increased by 12-15% during the last few weeks

There are concerns that deficient rainfall and water availability may cause issues for next year’s crop

Export demand is picking up

Availability of EU-compliant cumin is limited in the marketplace

Domestic demand is expected to pick up with upcoming festival season and easing of restrictions
